In sugar industry, microorganisms such as Leuconostoc and Streptococcus senterica catalyze the production of glucose from sucrose by secreting dextran sucrase, and glucose is further polymerized into dextran. Dextran is a high molecular weight polysaccharide polymer, and the type of glycosidic bond is mainly α-1,6 glycosidic bond. The presence of dextran poses a serious impact on sugar production. It significantly increases the viscosity of the sugar solution, reduces the filterability of sugar solution and produces abnormal shapes of crystals, resulting in increase of sugar production cost and poor quality. Dextranase can effectively uplift the heating speed, shorten the sedimentation and crystallization time, there can be It effectively increases the heating rate of cane juice, shortens the clarification and crystallization and eliminate the other issues to improve production efficiency and yield.
